Terroir

Vines planted on clay soils with Burdigalian limestone subsoils (hard limestone loaded with fossilized seashells).

Vinification

Biodynamic farming. Hand and mechanical harvesting. Spontaneous fermentation with indigenous yeasts at controlled temperature. Aged on fine lees in fiberglass tanks. The quality of the grapes, the care taken during winemaking, and a microdose of sulfites added before bottling ensure the wine’s stability over time.

A four-handed creation by Christophe Kaczmarek and Michel Maestrojuan from Domaine Entras, in the heart of Côtes de Gascogne.As always at Caaaaaaat, the wines are vinified, blended, bottled, and packed on the estate. From vineyard to cellar, everything is done with respect: regenerating soils, fostering biodiversity, and honoring the humans who are part of it.
